Crayfish is something I've never eaten, although Red Lobster up here used to serves something called "lagostinoes" that I loved. They looked like a large crayfish the shell halved and the diner given a small fork to access the meat therein. Several years back they claim that someone sued them over the dish and it left the menu. One of these days maybe I'll get down to Louisiana....
